And just like that! We have rain in Cape Town! In celebration of this rare occasion, I am making a big old pot of veggie soup. What’s the best thing about soup though? Eating a loaf of fresh bread with it of course 🙂

I have perfected the yummiest low carb bread recipe and I am sharing it with you here! What makes this recipe even better is that it’s packed with some superfood magic! Chia seeds, macca and turmeric are all packed with antioxidants and nutrients making this bread a win for both your weight management and health!

  • 1/2 cup coconut flour sifted
  • 1/2 cup ground flax seeds
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 eggs
  • 2 Tablespoons chia gel nine parts water to one part chia seeds
  • 1/2 cup coconut oil melted
  • 1/2 cup  coconut or almond milk
  • 1 teaspoon apple cider vinegar
  • tablespoon of  turmeric
  • tablespoon Macca powder
Preheat oven to 180 degrees.
Grease a bread pan
Mix coconut flour, ground flax, baking soda and salt together in small bowl.
Whisk the remaining wet ingredients together in a medium bowl.
Using whisk, mix in the dry ingredients into the wet mixture. Batter will be very thick.
Spread into bread pan.
Bake until toothpick comes out clean, about 40 minutes for bread and about 25 minutes Cool 10 minutes, then remove from pan and finish cooling on rack.
