I am yet to meet someone who does not love a good banana bread! The problem (besides only eating one slice) is that your average banana bread is basically cake and so left as treat, rather than a healthy breakfast or post-training snack.

Enter this amazing banting banana bread that will leave you satisfied in both the health and sweet tooth departments. Now this is a number one seller at our coffee shop and while you may think that revealing the recipe will damage my sales, I am not concerned at all- Afterall, what’s better than eating amazing banana bread?

INGREDIENTS:

(makes 6-9 individual positions or one large loaf)

  • 1x Cup almond flour ( 160 cal, 6 g carbs)
  • 1x cup coconut flour  (466 cal, 64g carbs)
  • 1/2 cup coconut oil
  • 3 x large eggs
  • 3x large ripe bananas (300 cal and 60 g carbs)
  • 1x tspn vanilla essence
  • 1x tspn cinnamon
  • 1x tspn baking powder
  • handful of almonds

Total cal content per serving:

154 cal and 21 g of carbs per serving /

compared to standard banana bread: 200 Cal and 32 g carbs

HOW TO:

Chop up bananas and mix all ingredients into a large mixing bowl. Blend with a hand blender until a smooth consistency. Preheat oven to 160 degrees. Pour mixture into a baking tray of your choice. Top mixture with cut up almonds and bake for 15-20 minutes. Remember to check your goods with a skewer. You want the mixture to be moist but with no residue on the skewer.
